Let's start from the beginning: the noodles. When we set out to make fresh noodles, we did not realize the uphill battle ahead of us. Industrialized food vendors told us the numbers wouldn't work. Chefs complained about the short shelf life. Cooks griped about the sensitive cooking times. Customers were confused about the chewy texture and notable dough taste. As far as we know, this is how fresh noodles should be made. With a fun, slippery chewiness, and fresh doughy flavor. There's still a long road ahead of us, but we're not ready to give up... Eat fresh noodles!
